At Benihana, our hooded Teppanyaki tables and robust make-up air continuously improve the air quality with fresh air circulating approximately 30 times per hour. By comparison, a typical restaurant circulates approximately only 8 times per hour.

Our restaurants are going above and beyond the local requirements to ensure your health and safety. Many of these steps were taken as we continued to serve you through our delivery and take-out menus, but now that we can open select dining rooms, we have enhanced our protocol even further to include:

  • Limiting the number of guests in the dining room per the guidelines
  • Screening employees for temperature and other health indications
  • Adhering to social distancing rules at all times
  • Requiring employees to wear masks and gloves
  • Providing guests with disposable menus / QR code menu options
  • Continuous cleaning and sanitization practices in place throughout the restaurant including tables, chairs, doors, check presenters, waiting area and restrooms
  • Peroxide-based sanitization of all surfaces after guests leave the table
  • Providing hand sanitizer to all guests and employees
  • Guests must wear masks prior to seating

A teppanyaki is a Japanese form of cooking food on iron griddles. In Japan, teppanyaki refers to food that has been cooked on an iron plate. Teppan refers to an iron plate and yaki means pan-fried, grilled or broiled. This cooking style originated from Misono, a chain of Japanese restaurants in Japan. It claims to have introduced this particular style of cooking in 1945.
Teppanyaki was observed to be more popular with foreigners in comparison to Japanese customers since they enjoyed the cooking maneuvers done by the chefs as they prepare the food in front of them. When the restaurants became more well-known to tourists, the chef’s food preparation routine and performance likewise increased, adding more sophistication and enticement.
The common ingredients used by the Japanese in teppanyaki cooking are cabbage, noodles, sliced seafood or meat. Animal fat or vegetable oil is used to cook the ingredients. Most restaurants in Japan highlight Kobe beef for their teppanyaki.
As for the teppanyaki Western-style, the ingredients commonly used are assorted vegetables, shrimp, lobster, beef and scallops, and soybean oil is used for cooking. Some also cook other staples that are preferred and available.

Teppanyaki griddles come in different sizes and shapes and have stainless steels on the back and front sides. They have polished griddle plates and are equipped with grease through drains that flow through a grease collector. Teppanyaki griddles are heavy duty and built for indoor or outdoor cooking. The griddles do not take up much space and are very convenient to use. It allows our chefs to cook without missing a beat in his routine and likewise allows our customers to watch on without fear of being burned or splattered with oil. We use top quality teppanyaki griddles in our restaurants.
